Artichokes - good source of Vitamin C and potassium.  It also contain cynarin, which helps to improve liver function and stimulate flow of file as well as lower blood sugar.

Asparagus - good source of Vitamins A and C.  A wonderful tonic for kidneys and helps with other skin problems.

Beans - a useful source of Vitamin A and C.  String beans have been known to resuscitate the pancreas, spleen and liver and is beneficial for diabetes and hypoglycemia.

Beets - are a rich source of potassium, calcium, iron beta carotene and vitamin C.  There is a potent anti-tumor activity in beet juice.  Beet juice is also helpful for alcoholism and drug addiction.

Broccoli - a good source of vitamins A and C, calcium and iron.  They are also high in bioflavinoids and seem to have more cancer fighting compounds.

Brussels Sprouts - a good source of vitamins A and C, potassium and iron. They have high amounts of bioflavinoids and indoles, which are may protect against cancer of the prostate and uterus.

Cabbage - an excellent source of vitamin C.  May help prevent colon cancer and the juice helps heal peptic ulcers and the gastrointestinal tract.

Carrot - a source of beta carotene and potassium.  Helps prevent night blindness and may help lower blood cholesterol.  

Cauliflower - a source of vitamin C and potassium. It also has bioflavinoids and indoles, which are may protect against cancer of the prostate and uterus.

Celery - a good source of potassium.  Helps gout and other forms of inflammatory arthritis, as well as allergies, hyperactivity and attention deficit disorders.

Corn - a good source of Vitamin A and C, iron and potassium.  

Cucumbers - because of their high water content,  they can work as a natural diuretic and considered one of the best skin toners around.

Eggplant - provide very little nutrition and are members of the nightshade family.

Kale-Collard - an excellent source of beta carotene and vitamin A and C, iron and calcium, which is ready absorbable and helps calcium malabsorption and osteoporosis.  It also contain cancer-fighting compounds of Bioflavinoids and Indoles .  

Lettuce and other salad greens - those with dark green or deeply colored leaves are the most nutritious and are a good source of beta carotene, vitamin C, iron, potassium and calcium.

Mushrooms - rich in minerals.  The high glutamic acid content may boost immune function.

Onions - although they do not have nutritional content, they may help lower elevated blood cholesterol, lower blood pressure and reduce the ability of the blood to clot.  It has an antibacterial effect which may help with infections.

Parsnip - a useful source of Vitamin C and potassium.  Are beneficial in restoring luster to hair, skin and nails.

Peas and pea pods - a source of vitamin A and C, thiamine, riboflavin and potassium.  Also high in pectin which helps control blood cholesterol levels.

Potato - a good source of vitamin C and B6 as well as potassium and other minerals.  Also beneficial in removing heavy metals from the body tissues.

Pumpkin - a rich source of beta carotene, potassium and Vitamin C.  Although the seeds are often thrown away, they area rich source of protein and zinc.  

Radish - a useful source of vitamin C.  They also provide sulfurous compounds that balances the thyroid.  It also gently stimulates peristalsis and helps to break up the fat deposits in the liver.

Spinach - a rich source of vitamin A and C and iron are high in bioflavinoids and antioxidants that help protect against cancer.  Spinach juice has adequate levels of iron which can alleviate fatigue and anemia.

Tomatoes - a useful source of vitamin A and C and potassium.  They also contain bioflavinoids that are the natural cancer-fighting agent and may reduce the risk of prostate cancer.  Tomato juice also revitalizes the liver and adrenal glands.

Turnips - are a useful source of vitamin C, although the turnip tops/greens are even more nutritious.  They contain sulfurous compounds that help protect against certain forms of cancer.

Zucchini - a good source of Vitamin A and C.  It also contains enough calcium to be retained in the body and tends to strengthen weak bones and prevents them  from becoming brittle.
